Consider layered lighting: use a combination of floor lamps, table lamps, and a desk lamp.

I installed track lighting in my house and love the flexibility it offers.
For a quick fix, you can install a pendant light for the dining area using a cup hook to position it over the center of the table. Use a 12" frosted or opal glass globe with a warm 2700K LED bulb (12-15 watts, dimmable). This will create a soft, shadowless glow.
For the other sockets, install matching ceiling lights—8" or 10" frosted/opal glass fixtures with 6-8 watt, 5000K LED bulbs for a bright, airy feel during the day. Ensure these are on a separate switch from the pendant. Add a desk lamp to suit your style, such as a classic spring-arm lamp.
Updating switch plates with a new dimmer is also a good move.
